Happy Weekend

Soren wanted to wish you all a happy weekend!​

My weekends off with my family are dwindling - as the performance season is around the corner. Pappa has a busy weekend ahead working on a film score with talented composer William White - so Soren and I will be bringing the ruckus to Cincy's parks, finish his tent and start in on some more sewing and knitting projects (Soren might end up with a corduroy jacket and camp/pom-pom hat…no promises though…).​  Happy weekend!

dropping stitches

Because Soren kept playing with the thread.  Ripped off one double needle of stitches as I neared the end of a purl row.  To all you other knitters out there - you know ​what I am talking about.  And you might be shocked, that, in fact - it didn't bother me much.  Because I am glad that he is interested in the thread, in the needles, in this crazy continuous knot forming into hand/arm mitts.  I encourage him to drag the dog food holder into the bathroom, root through toothbrushes, pick a toothpaste and brush his teeth - even though I think he is playing more with the faucet than scrubbing.  I love watching him grow and learn - and more than that, I appreciate that he wants me to be a part of it.

This long weekend was much needed.  We spent most of it together as a family - which was absolutely priceless.  I always love watching the dudes together - they are quite the adorable team.  We also spent some time with Rick's family.  Seeing Soren run around with his cousins was a treat.  The three of them were a blast.  Zoë, Rick's niece closest to Soren's age was an absolute doll.  Precious moment exhibit A : 

Soren was looking disgruntled, but not quite tantrum quality frown.  She walks up to him, crooks her head down to face him eye to eye, and asks him, 'Soren? you ok Soren?'.  He proceeded to say something in toddler gab, she looked a bit confused but kind of understood.  They then proceeded to jump up and down on this HUGE play pad Papaw brought up from the basement - laughing and screaming.  So cute!  

And, personally - I set out the task of working a bit on the 'me'.  I haven't sewed or knitted since, well - Soren was born and it was about time to get back to it!  I dusted off the sewing machine (literally…), started a knitting project, made a couple stuffed turtles to work on my sewing chops (much needed work indeed…) and even put a HUGE dent in a wonderful book.  All in a weekend.  Felt good to dig back into the crafty nook in my noggin.​

Happy Weekend

It's Friday!  Which actually means something to me.  I usually work weekends, especially holidays - but not this one!  Looking forward to spending time with my guys and spinning through a web of DIY ideas, work shenanigans and home hunting or improving.  Much to think about friends!​  Have a good weekend!  (ps - snapping photos is definitely on the to-do!)

Egg Muffins and Art

What do egg muffins and art have in common??  More than you think!  Today, I was a refrigerator survivalist.  Since we cleaned out the fridge before vacation and we have a constantly feasting toddler - our fridge is a blinding sight of white walls and shelves, so I had to get creative.  On a pinning quest on pinterest last night, I ran across this recipe for Egg Muffins.  Since we are vegetarians - Chorizo sausage is kinda​ out of the question (although I fondly remember the flavor from our meat eating days... Oh, Kroeger & Sons, such delicious Chorizo!). So instead - I used some of our All American Veggie patties form Amy's Kitchen and threw in a shallot and garlic - which you could say resulted in a piece of art.  

But that's not the art I am talking about.  While I was preparing dinner - our little man was at the table coloring.  Yes! coloring.... didn't really see this day coming!  You know, me in the kitchen making food with Soren in the other room, mumbling toddler speak (which sounds like fluent Russian), while creating a Crayola marker masterpiece.  I feel like the evenings we spent with him in his high chair (because he could barely hold his head up...), listening to podcasts while I fixed dinner were just yesterday!  This time is so fast and fleeting - grab it before it disappears!  As soon as I put the muffins in the oven - I ran over, gave him a smooch on the cheek, told him how beautiful it was and snagged one more snuggle.

...the muffins weren't bad either, Soren ate two whole ones by himself!​

​Veggie Patty Egg Muffins

Ingredients:

​2 All American Veggie Patties from Amy's Kitchen (really any veggie patties will do - but these ones are extra delicious)

1 1/2 cup broccoli florets

1 tbsp olive oil​

1 shallot​

1 clove garlic​

8 large eggs

1/4 cup milk

1/2 tbsp grape seed oil

1/2 tsp baking powder

salt & pepper to taste

Grated Colby Jack Cheese (what I had in the fridge - feel free to use parmesan or whatever you fancy...)

Directions

1. Preheat oven to 375 F.

2. In a large saute pan, heat olive oil over medium heat and cook shallot, garlic and veggie patties until patties start to crispen on the outside.  Stir and break up the patties to create more of a ground mixture.  About 5 minutes. 

3. Whisk together eggs, milk, grape seed oil and baking powder.  Season with salt and pepper.

4. Lightly oil, butter or use non-stick spray on a 12-cake muffin tin.  Spoon out the pattie and broccoli mixture evenly into each cupcake.

5. Ladle the egg mixture over patties and broccoli. 

6. Sprinkle with Colby-Jack cheese.

7. Bake for 15-20 minutes.
